Whipped Chocolate Mousse with Raspberry Coulis


For the Whipped Chocolate Mousse:

  • 1 cup heavy cream
  • 1/2 cup semisweet chocolate chips
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • Bmax cream charger

For the Raspberry Coulis:

  • 1 cup fresh raspberries
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon lemon juice


  1. Start by making the Raspberry Coulis: a. In a small saucepan, combine the fresh raspberries, granulated sugar, water, and lemon juice. b. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens slightly, about 5-7 minutes. c. Remove from heat and strain the coulis through a fine-mesh sieve into a bowl to remove the seeds. d. Allow the coulis to cool to room temperature, and then refrigerate it until you're ready to serve.

  2. Now, let's prepare the Whipped Chocolate Mousse: a. In a microwave-safe bowl, melt the semisweet chocolate chips in 30-second intervals, stirring in between until the chocolate is smooth and fully melted. Alternatively, you can melt the chocolate using a double boiler. b. Let the melted chocolate cool to room temperature.

  3. In a separate bowl, combine the heavy cream, powdered sugar, and pure vanilla extract. Mix well.

  4. Pour the cooled melted chocolate into the cream mixture and gently fold it in until fully combined. Be sure not to overmix; you want a light and airy texture.

  5. Once the chocolate and cream mixture is well combined, pour it into a cream charger canister.

  6. Charge the canister with a cream charger cartridge according to the manufacturer's instructions. Make sure to shake the canister vigorously after charging to distribute the gas evenly.

  7. Refrigerate the canister for at least 1 hour to chill the mousse.

  8. To serve, remove the chilled canister from the refrigerator. Shake it again to loosen the mousse.

  9. Pipe the Whipped Chocolate Mousse into serving glasses or bowls.

  10. Drizzle the Raspberry Coulis over the top of the mousse.

  11. Garnish with fresh raspberries or a sprinkle of grated chocolate, if desired.
